I enjoy eating hot soup, especially during the cold weather months. A bowl of soup makes a good meal. It’s healthy, filling, and economical. Tomato soup never used to be one of my favorite flavors. I love tomatoes, but I found tomato soup rather boring. As a kid I ate many steaming bowls of tomato soup with my grandmother. She must have loved it. In thinking back, I recall that we never ate just plain tomato soup. Grandma had different ways to make it taste better. There are actually a zillion ways to add more flavor to canned tomato soup. Here are six of my family’s favorite ways:
1. Oyster Crackers and Colby Cheese Cubes
This is one of my Grandma’s additions to tomato soup. Heat the soup up in a bowl with water until it’s piping hot. Then, stir-in a handful of Colby cheese cubes. The cubes won’t melt completely, but they will get soft. Drop in another handful of oyster crackers, and you’re in for a treat.
2. Milk, Diced Tomatoes and Dried Basil
Instead of adding water to prepare the canned, condensed soup, use a can of milk instead. It will make the tomato soup rich and creamy (and help cut down the acid). Stir in a half cup of diced tomatoes and a small sprinkle of dried basil; heat and eat. This is a creamy, chunky version of tomato soup.
3. Salsa, Crumbled Tortilla Chips and Sour Cream
Add the water as usual to the condensed soup in a bowl. Then, stir in a half to three-fourths cup of salsa, depending how chunky and thick you want your tomato soup to be. Heat it up. Crumble a handful of tortilla chips and drop them in. Finally, put a dollop of sour cream in the center. Ole`!
4. Buttered Cinnamon Toast
I know this is an odd addition, but it tastes better than it sounds. Prepare a bowl of canned tomato soup as usual. Tear two slices of buttered cinnamon toast into pieces, and drop it into the soup. Stir it in and enjoy. The cinnamon gives it a nice warm, spicy flavor.
5. Cottage Cheese and Black Pepper
This is one of my favorite ways to jazz up boring canned tomato soup. Add a can of water- or milk if you prefer- to a can of condensed soup. Heat it up in a bowl. Carefully place a couple heaping tablespoons of cottage cheese into the tomato soup, and add a shake or two of black pepper on top. (Cottage cheese is good in chili too.)
6. Velveeta Brand Processed Cheese, Croutons and Oregano
Heat the condensed soup up in a bowl with water until it’s steamy hot. Stir-in a handful of cubed Velveeta. The processed cheese will melt and make the tomato soup creamy. Drop in a handful of croutons, and add a dash of dried oregano to jazz up boring tomato soup.
