Recently I wrote the recipes for my comfort food passion. One of my inspirational writers, Charlotte Kuchinsky commented her comfort food was Chocolate, Chocolate, Chocolate, and Chocolate. Well Charley these are just for you and the other Chocolate addicts like me. Let’s all roll up our sleeves, take off our rings, wash our hands, and get cooking chocolate. Remember chocolate is good for you physically, mentally, and emotionally. Remember to thank Charlotte Kuchinsky for inspiring me.
Chocolate Quick Bread
2 cups chunky applesauce
14oz can sweetened condensed milk
1- 8servig size instant sugar free chocolate pudding
1 Chocolate Cake mix (cheapest you can find)
½ cup rolled oats
1-2 Tablespoons Hershey’s chocolate syrup
1+ teaspoon cinnamon
1 teaspoon salt.
Preheat oven 375. Spray 2 loaf pans and set aside. Mix all ingredients and pour into 2 loaf pans. bake 35-40 min. cool 10min in pan the remove to cooling rack.
To make muffins the recipe is the same. I would use cup cake papers in your favorite muffin pan and bake 20-25min.
Chocolate Pick Me Up Beverage
4 cups strong cold coffee (I like Columbian)
1+ cups chocolate syrup (Hershey’s)
4 cups good chocolate ice cream
½ +cup Kahlua (optional)
Mix 2-3 Tablespoons chocolate syrup through whipped topping and set aside. Place all other ingredients in blender with crushed ice blend well. Pour into tall glass of crushed ice. and top with chocolate whipped topping.
Dark Chocolate Pie
1- 9″ Oreo Pie Crust
1- 8 serving size Instan Chocolate pudding (Sugar free in OK)
¾ cup Hershey’s chocolate syrup divided
16oz whipped topping (Cool Whip)
2 cups Buttermilk
1 cup black and strong coffee (I like Columbian)
2+ Tablespoons chocolate sprinkles
Mix whipped topping with ¼ cup Hershey’s chocolate syrup and set aside. Mix remaining Hershey’s chocolate syrup with buttermilk, coffee, 1 Tablespoon chocolate sprinkles and instant chocolate pudding. Pour mixture into Oreo Pie crust. Top with chocolate whipped topping and enhance with remaining chocolate sprinkles. Chill 2-3 hours or overnight.
Chocolate fudge icing (Pillsbury)
Preheat broiler. Spread chocolate icing on top and bottom of S’mores. Place bottom on cookie sheet and set top aside. Press mini marshmallows into frosting on bottom. Slide cookie sheet under broiler and watch till marshmallows begin to brown. Place frosted top on marshmallows while they are still warm. Eat carefully they are HOT! Grandchildren love these.
