As the mother of eight children you can imagine how many birthday cakes we make around here. Last month alone we had two baby showers and two birthdays.
It was my job to make the cake this time and I chose a white cake with white icing. I just made a two layer, round cake and made a vanilla, butter cream frosting.
I made the cake and it came out a little too round on the top so I thought if I turned it upside down and put the other one on right side up it would be a little more flat on top. So I put the first layer down on the plate and put the icing on and then plopped the next layer on and started to frost that one and it started to fall apart and slide down. I tried “gluing” it together but that just made it worse. Then I tried toothpicks to no avail! By this time it was looking pretty hopeless.
Then I took a gamble , because I couldn’t afford to waste all these ingredients, and I used two spatulas and lifted the top layer off the cake. I scraped all the icing off that I could save. By now the icing was still tasting great but it was full of crumbs and really ugly. I turned the bottom layer over and shaved a little off the top to flatten it out a bit.

I then took the ugly icing and iced the bottom layer and put the top one on flat side down. You can imagine how it looked by this time but I forged ahead and put the top layer on and spread the rest of the icing on the top.
So now its all put back together but what a mess!!
After a while of standing there staring at this really big mess, I came up with the idea of covering it up with…..chocolate. Now this is the easiest fix I have ever come up with. You put a bag of chocolate chips and 1 Tablespoon of oil in a measuring cup and microwave for a couple of minutes and stir and pour it over the cake and let it drip down the ugly, crumby cake. It hardens in about a half hour.
Every person that came through the door said,” Mom, you outdid yourself! ” No one could tell how bad a mess that cake really was. I’ve since made the same cake several times for school and here at home without it being an emergency situation and its a big hit.
Make a white cake mix according to package directions
Mix :
1 stick butter
1 package cream cheese
2 cups powdered sugar
1 teaspoon vanilla
1-2 teaspoons milk
Topping:
1 bag semi sweet chocolate chips
1 Tab. vegetable oil
melt in microwave for 2 minutes and stir till smooth
