My family loves any excuse to have a great dinner and sharing time spent with each other. Holidays are the few times when everyone can find time to come together for great conversation and good food. The following meal has been an Easter dinner favorite of ours for many years. It does not require a lot of ingredients or time to prepare and taste wonderful. The meal consists of baked ham, sweet potatoes, corn and bread.
Three Pound Boneless Ham
One Jar Maraschino Cherries
8 oz. can pineapple tidbits (small diced)
2 cups brown sugar
½ cup orange juice
2 large cans yams
1 cup pecans (any style)
1 stick butter
1 bag miniature marshmallows
1 bag frozen corn
1 loaf of French or Italian bread
1 cup shredded Italian cheese mix
½ cup shredded parmesan cheese
The ham is pre-cooked so it will not require an all day of cooking. The glaze gives it a delicious and sweet flavor. The sweet potatoes are a request by my family for every holiday, they are yummy and super easy to prepare. The pecans are optional or if you prefer walnuts can be substituted. The bread taste like it came fresh from a delicatessen and is also very easy to prepare.
Pre-heat oven to 350 degrees. In a bowl combine 1 c. brown sugar, the entire jar of cherries and its juice, ½c orange juice and the pineapple. Stir all ingredients until well mixed. With a fork poke several holes in the ham, do not forget the bottom and sides. Spoon or pour half of the glaze over the ham, cover with aluminum foil and bake for 2 hours. Approximately every ½ hour spoon more glazing over ham. The last ½ hour pour remaining glaze over ham and cook last ½ hour without foil covering.
Drain liquid from both cans and pour yams into a baking dish. Using a fork or a hand potato masher, mash the yams leaving some small unmashed pieces. Mix 1 c. brown sugar into the yams; stir well to make sure the brown sugar is evenly distributed. Add the pecans if desired and mix well. Slice ½ stick butter into a few pats over the yams and push down with a fork. Top with marshmallows, I use the entire bag but it is your option to use less if desired. Cover with foil and bake for approximately 30 minutes. Remove the foil and cook until the marshmallows melt and have a light brown color.
Begin preparing the bread after the yams have been placed in the oven. Slice the bread down the length of the loaf and open. Spread butter or margarine on the entire top of both halves. Sprinkle Italian seasoning over the butter. Spread the Italian cheese mix on both halves and top with the parmesan cheese. Put the halves together, cover with foil and bake for approximately 20 minutes or until cheese melts.
Pour corn in pan; add two tablespoons of water and ½ stick butter. Follow package directions for cooking time.
